This decadent cheese burger is prepared with juicy beef patties topped with smoked gouda, enveloped in a customizable cheese sauce, and served on a cheesy brioche bun. A cheese crisp and pickled jalapeños add layers of texture and flavor.
1. After Step 6 of the brioche recipe, knead in 40g cheddar into the dough.
2. Proceed with proofing and baking according to the brioche bun recipe.
3. Before baking, brush with egg wash and sprinkle cheddar on top of the buns.
4. Once cooled, slice the buns and toast the cut sides in butter before serving.
5. Heat a non-stick pan over medium-low heat.
6. For the cheese crisp, add half the grated cheeses in a circular mound using a mold for clean edges.
7. Melt the cheese until crispy but not browned, and remove to paper towels.
8. Repeat with the remaining cheese to make a second crisp.
9. Form the ground beef into 85g balls, forming 2 patties per burger.
10. Heat a cast iron skillet with neutral oil over high heat.
11. Smash each beef ball into the pan using a spatula and parchment paper, season with salt and pepper.
12. Cook for approximately 2 minutes for a crispy crust on the patties, then flip, reduce heat to low, and top with gouda slices.
13. Cover the skillet for 30 seconds to melt the cheese, then remove from heat.
14. Assemble the burger in this order: Bottom bun, cheese crisp, 2 burger patties, pickled jalapeños, and top bun.
15. Heat a sizzle platter on high for 2 minutes before serving.
16. Spoon ½ cup of warm cheese sauce onto the hot platter.
17. Slice the assembled burger in half and place it directly onto the bubbling cheese sauce, then serve immediately.
